Chicken with tomato sauce, garlic and polenta

It's the best chicken with tomato sauce ever eaten. As in the case of the recipe for marinated meatballs published on the blog, I was surprised to find that the method of preparation and the proportion, or lack (onion), of some of the ingredients, actually turns it into a & # 8220other food & # 8221.
I kept thinking, what's the difference? Well, it's without onions (I put onions), with garlic more than 2 puppies (I would put garlic in cakes, I like it so much), I thought I didn't go with chicken but this dish contradicted me, it's with oregano which I was not used to putting it except in pizza (spices always make a difference) and I happened to have 450 ml of clear soup, it can be vegetables or meat or a simple water left over from boiling potatoes (when I don't have them boiled in shell).

I recommend eating it with polenta. I changed something insignificantly, I point out in parentheses how.

INGREDIENTS
3 chicken legs (I put 4)
1-2 tablespoons olive oil or sunflower
1 cup like coffee (from the maricica) with wine
5 tomatoes (I used canned chopped tomatoes in broth 450 g)
1 teaspoon broth (I put 1 tablespoon on top with concentrated tomato paste, the meat being more)
5 cloves garlic (I put a head)
1 teaspoon oregano (with tip)
paprika, salt (or 1 tablespoon mix of spices for quality chicken)
1 handful of mushrooms

PREPARATION Chicken with tomato sauce, garlic and polenta
Prepare a bowl / tray with high walls for the oven (2.5l minimum).

1 I cut the chicken legs in two. I usually remove the skin. I cut them about 1 cm deep in the fleshy parts to penetrate the flavors and to fry. I put them on a tray, sprinkled them well with the mix of chicken spices (on the eyes, enough to cover everywhere) and I rubbed them to get the spice into the notches.
2. In a large pan, heat the oil and fry the meat on both sides just enough to turn a little brown, about 5 minutes.
3. I added the wine, let it roast for another 2 minutes and take the meat out in a bowl with a lid / plate.
4. Add the chopped mushrooms and cool leaving the juice.
5. Chop the diced tomatoes. This time I put the can.
6. I dissolved the broth in two cups of soup and added them.
9. Let them boil for about 5 minutes.
10. Preheat the oven to 200-220 degrees and leave it to stand.
11. Add the peeled and crushed garlic, 1 teaspoon of large oregano and, if necessary, season with salt. It was not the case for me, the can with tomatoes was already salty. Keep in mind that it decreases in the oven and becomes saltier.
12. Transfer to the bowl for oven and bake it without a lid until it drops 3 more fingers and makes a beautiful crust on top.

It is eaten with polenta. If you don't like polenta, you can make puree or steamed rice.

This recipe for tomato sauce it's my favorite. It's just good for anything. That's exactly what it should be called, tomato sauce good at all. You can put it in any preparation. From pizza, pasta, lasagna, tomato soup, chicken with parmesan or fish in the oven. This is my favorite recipe for tomato sauce, fast, delicious and extremely fragrant. In summer, I really want to take advantage of good and ripe Romanian tomatoes, especially since I love tomatoes and especially because my father constantly brings me tomatoes from his garden, organic, sweet and juicy.

These tomatoes remind me of my childhood with my grandparents. Not infrequently my grandmother found me among the stalks, eating tomatoes with both hands, without even washing them. And now I do the same. I love to break a ripe tomato, wipe it with my hand and eat it with gusto. Unfortunately, this summer I was not able to reach my grandmother, but fortunately the tomatoes came from my father who made his retirement home very close to my grandmother.

Besides my father's tomatoes, my grandmother insists on sending me fresh eggs from her chickens, onions, garlic, parsley. I'm really very lucky to have them there. Returning to the tomato sauce recipe, choose well-ripened, sweet and juicy tomatoes. Even if you buy them from the market, choose the smallest and completely red ones, with a thin skin. And beware of those that all look the same, as if they were made on a computer, as my father says. I chose to make a simple recipe, without onions, and without other vegetables, in order to enjoy the taste of tomatoes as much as possible.

So I put garlic, herbs, fresh basil and thyme. I cut the tomatoes into cubes because I wanted to keep some of their texture, but you can also chop them with a food processor or a vertical blender. The result is a delicious tomato sauce, flavorful and so good that it can be eaten on bread. You can use it in any recipe you want, or you can put it hot in sterilized jars and you can use it in winter.


Start the oven at 180 ° C (heat up and down with ventilation) and prepare a heat-resistant tray.

Put in the tray mashed tomatoes, a little salt, pepper and herbs. Mix well with a fork.

Wash the chicken breast, cut it in half and dab with a kitchen napkin. Season it on both sides with salt and pepper, then place the two pieces in the prepared tray, over the tomatoes.

Separately, mix in a bowl the cream cheese, finely chopped dill and half the amount of cheese.

Distribute this mixture over the chicken breast and sprinkle with the remaining cheese.

Put the tray in the oven for 45-50 minutes, enough time to have juicy meat at the end, not dry at all.

Leave the tray aside 10-25 minutes after baking, then we can serve or place in pans.

It goes perfectly with any garnish: rice, pasta, potatoes, salads, peas, beans, etc.


Chicken tinsel with garlic - ingredients and preparation

Ingredient:

  • 4 upper thighs (with or without bone)
  • a large julienned onion
  • 5 sliced ​​garlic cloves
  • a teaspoon of dried thyme
  • 300 grams of sliced ​​champignon mushrooms or a handful of dried and hydrated mushrooms in advance for at least an hour
  • salt and pepper to taste
  • 3 tablespoons oil
  • 150 milliliters of tomato paste
  • 100 ml of white wine (can also be replaced with beer)
  • freshly chopped parsley

Method of preparation:

Heat the oil in a pan. Salt and pepper the meat on all sides. Fry in a pan until evenly browned on both sides. Remove the meat on a clean plate, debone (if the thighs are boned) and cut into generous pieces.

Put the onion, garlic and mushrooms in the oil in which you fried the meat. Leave to harden for 3-4 minutes, then quench everything with a glass of wine and tomato paste. Mix well, add salt and pepper and simmer for about 15 minutes.

After the time has elapsed, put the chicken pieces in the pan and leave them on the fire for about 20 minutes or until the meat is soft and tender and the sauce is quite thick. You can add a cup of hot water along the way if the sauce drops too much. At the end, after stopping the fire, you can sprinkle chopped parsley on top.

You can serve this delicious chicken ostropel with mushrooms and tomato sauce with a portion of polenta, mashed potatoes or baked potatoes. Good appetite!

LASAGNA WITH CHICKEN MEAT

  • 1 l tomato juice
  • 150 gr grated cheese
  • 150 gr grated mozzarella
  • 200 ml cooking cream
  • a tablespoon of butter for a tray

WORK PLAN lasagna with chicken

Add the grated carrot, then the minced meat. Season to taste (salt, pepper, dried thyme).
Leave it on the fire until the meat changes color, then add about 200 ml of concentrated tomato juice.

Leave on the fire until the meat boils well.
Place a layer of lasagna sheets on the bottom of the tray (greased with butter) (I used sheets that do not require pre-boiling).

Sprinkle with a layer of tomato juice.

Cover with a third of the hardened meat

and then sprinkle a layer of mozzarella. You can also use cheese or other type of melting cheese to bind the meat composition.

Place the second layer of lasagna sheets. Cover with tomato juice and the second third of the hardened meat, plus another layer of mozzarella.
Repeat the procedure, then cover with the last layer of lasagna with tomato juice. The lasagna sheets will boil in the tomato juice.

Leave in the oven at 180 degrees for 30 minutes, then remove and pour the cream mixed with cheese and leave in the oven for about 30 minutes.
